Pork Al Pastor Bowl with Avocado Crema


  • 1 Package Opaa! ReadyCarved™ Pork Al Pastor slices
  • 1 can (15 oz) black beans (rinsed and drained)
  • 4 Cups cooked white rice
  • 6 Tbsp. lime juice (divided)
  • 1 cup diced tomatoes
  • 2 ripe mangoes (peeled and diced)
  • 4 Tbsp. fresh cilantro (optional)
Avocado Crema
  • 2 avocados
  • 1 Cup sour cream
  • 2 Tbsp. lime juice
  • 1/2 Tsp. salt


  1. Make the Avocado Crema by combining the avocados, sour cream, 2 tablespoons of lime juice, and salt in a blender or food processor. Process until well blended, about 1-2 minutes. Taste for seasoning. Set aside
  2. In a small skillet over medium heat, warm the black beans for 2-3 minutes. Transfer to a plate and keep warm.
  3. Add the ReadyCarved™ fully cooked Pork Al Pastor slices to the same skillet and warm through, about 1-2 minutes.
  4. Toss the cooked white rice with 4 tablespoons of lime juice.
  5. Divide the rice into 4 bowls. Top each bowl with al pastor pork, black beans, diced tomatoes, diced mango, and cilantro.
  6. Drizzle each bowl with the Avocado Crema and the remaining 2 tablespoons of lime juice.
